  • 1/4 cup chopped Cilantro
  • 2 tablespoons Lime Juice, freshly squeezed
  • 1 tablespoon Olive Oil
  • Salt and freshly ground Black Pepper, to taste

Rice

  • 1 cup Long-grain White Rice
  • 2 cups Water
  • 1/2 teaspoon Salt

  • Shredded Cheddar Cheese
  • Sour Cream or Greek Yogurt
  • Hot Sauce
  • Lime Wedges
