  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan or line it with parchment paper for easy removal.
  2. Make the crust: In a mixing bowl, cream together the unsalted butter, 1 cup flour, and powdered sugar until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared pan. Bake the crust for 15-18 minutes or until it’s lightly golden.
  3. Prepare the lemon filling: While the crust is baking, whisk together the lemon juice, lemon zest, eggs, granulated sugar, and sifted flour in a bowl until smooth and fully combined.
  4. Bake the filling: Once the crust is baked, pour the lemon filling mixture over the hot crust. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggly in the center.
  5. Cool and serve: Allow the lemon bars to cool completely at room temperature, then refrigerate for at least 2 hours before slicing into squares. Dust with powdered sugar if desired and serve chilled or at room temperature.
