Ingredients

Scale

Wet Ingredients

  • 1 and 1/2 cups milk (360ml, either dairy or non-dairy)
  • 2 large eggs
  • 1/2 cup pure maple syrup (120ml)
  • 1/2 cup unsweetened applesauce (120g)
  • 1/2 teaspoon vanilla essence

Dry Ingredients

  • 3 cups old-fashioned whole oats (255g)
  • 1 teaspoon baking powder
  • 1 and 1/2 teaspoons cinnamon powder
  • 1/4 teaspoon nutmeg powder
  • 1/4 teaspoon salt

Add-ins

  • 1 generous cup chopped peeled apple (120g)
  • Optional: 1/2 cup chopped walnuts or pecans (50g)
  • Optional: coarse sugar for sprinkling

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners to prepare for baking the oatmeal cups.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the milk, eggs, pure maple syrup, unsweetened applesauce, and vanilla essence until fully combined and smooth.
  3. Combine Dry Ingredients: In a separate bowl, mix the old-fashioned oats, baking powder, cinnamon powder, nutmeg, and salt thoroughly to ensure even distribution of the spices and leavening agent.
  4. Combine Wet and Dry: Pour the dry ingredients into the wet ingredients bowl and stir gently until just combined. Be careful not to overmix to keep the texture light.
  5. Add Apples and Nuts: Fold in the chopped peeled apple and optional chopped walnuts or pecans, distributing them evenly throughout the mixture.
  6. Fill Muffin Tin: Spoon the oatmeal mixture evenly into the prepared muffin tin, filling each cup about three-quarters full. Sprinkle coarse sugar on top if desired for a crunchy finish.
  7. Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the oatmeal cups to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • For a vegan version, substitute eggs with flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water) and use plant-based milk.
  • Use certified gluten-free oats if preparing for a gluten-sensitive diet.
  • Applesauce adds moisture and natural sweetness; no need to add extra sugar beyond the maple syrup and optional sprinkling.
  • Store oatmeal cups in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
  • Reheat in the microwave for 30-45 seconds before serving, if desired.
