  • 8 egg roll wrappers

Instructions

  1. Heat the Oil: In a large skillet, heat 1 cup of vegetable oil over medium-high heat until shimmering and hot enough for frying.
  2. Prepare the Filling: In a medium bowl, mash the 3 diced avocados to your desired consistency. Add the ¼ cup diced red onion, 1 diced Roma tomato, 3 tablespoons chopped fresh cilantro leaves, 1 teaspoon garlic powder, lime juice, and season with salt and pepper. Mix thoroughly to combine.
  3. Assemble the Egg Rolls: Lay one egg roll wrapper on a clean surface with one corner pointing towards you. Spoon some of the avocado mixture into the center of the wrapper.
  4. Fold the Wrapper: Moisten the edges of the wrapper with a little water using your finger. Bring the bottom corner up over the filling and roll tightly.
  5. Seal and Roll: Fold in the left and right sides, then continue rolling the wrapper upwards. Press the edges firmly to seal. Repeat this process for all egg roll wrappers and filling.
