Ingredients

Scale

Chicken and Seasonings

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt

Liquids and Cheeses

  • 2 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 1 package (8 oz) cream cheese, cubed and softened
  • ½ cup heavy cream or half-and-half
  • 1 tbsp minced garlic

Pasta

  • 12 oz pasta (penne, rotini, or your favorite)

Optional Garnish

  • Chopped parsley
  • Extra grated Parmesan cheese

Instructions

  1. Prepare the Chicken: Season the boneless, skinless chicken breasts with garlic powder, onion powder, black pepper, and salt to infuse them with flavor before cooking.
  2. Add Ingredients to Crockpot: Place the seasoned chicken breasts into the crockpot. Add the minced garlic, chicken broth, and cream cheese cubes on top.
  3. Cook the Chicken: Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is fully cooked and tender enough to shred easily.
  4. Shred the Chicken: Remove the chicken breasts from the crockpot and shred them thoroughly with two forks, then return the shredded chicken to the crockpot.
  5. Add Pasta and Dairy: Stir in the uncooked pasta, Parmesan cheese, and heavy cream (or half-and-half) into the crockpot mixture.
  6. Cook Pasta: Cover and cook on high for an additional 30-45 minutes or until pasta is tender, stirring occasionally to prevent sticking and ensure even cooking.
  7. Serve: Once the pasta is cooked and creamy, give it a final stir, garnish with chopped parsley and extra Parmesan cheese if desired, and serve warm.

Notes

  • Use your favorite type of pasta but shorter shapes like penne or rotini work best for even cooking in the crockpot.
  • Softened cream cheese is easier to blend into the sauce for a smooth, creamy consistency.
  • If the sauce is too thick after cooking, you can stir in a little more chicken broth or cream to loosen it.
  • For an added flavor boost, sprinkle some red pepper flakes or Italian seasoning when seasoning the chicken.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
