Ingredients

Scale

For the Truffle Mixture

  • 1 cup mascarpone cheese (about 240g)
  • 1 cup ladyfinger cookies, crushed (about 100g)
  • 1/2 cup espresso, cooled (about 120ml)
  • 1/4 cup sugar (about 50g)
  • 1 teaspoon vanilla extract

For Coating

  • 8 oz dark chocolate, chopped (about 225g)
  • 1/4 cup cocoa powder (for dusting)

Instructions

  1. Prepare the Coffee Mixture: Brew a strong cup of espresso and let it cool completely to room temperature to avoid melting the mascarpone later.
  2. Make the Mascarpone Filling: In a large mixing bowl, combine the mascarpone cheese, crushed ladyfinger cookies, cooled espresso, sugar, and vanilla extract. Stir gently until the ingredients are thoroughly mixed and smooth.
  3. Chill the Mixture: Cover the bowl and refrigerate the mixture for about one hour to firm up for easier shaping.
  4. Shape the Truffles: Using a cookie scoop or spoon, form small balls from the chilled mixture and place them evenly spaced on a parchment-lined baking sheet.
  5. Melt the Chocolate: Gently melt the dark chocolate using a double boiler or microwave in short bursts, stirring frequently until smooth and glossy.
  6. Coat the Truffles: Dip each truffle into the melted chocolate, allowing any excess to drip off. Place the coated truffles back on the parchment paper.
  7. Chill to Set: Refrigerate the coated truffles for about 30 minutes until the chocolate shell is firm and set.
  8. Finish with Cocoa Dusting: Lightly dust the set truffles with cocoa powder before serving for an elegant touch.

Notes

  • Ensure the espresso is fully cooled before mixing to prevent the mascarpone from curdling.
  • Use high-quality dark chocolate (at least 60% cocoa) for the best flavor and texture.
  • Store the truffles refrigerated in an airtight container and consume within 3-4 days for optimal freshness.
  • For a boozy twist, add a tablespoon of coffee liqueur to the mascarpone mixture.
