This vegan toasted bread sauce is a creamy, flavorful accompaniment made by toasting bread to golden crumbs and simmering them with almond milk, aromatic herbs, and warm spices. Finished with soya cream and crispy fried breadcrumbs, it offers a rich, comforting texture and is perfect alongside roasted vegetables, plant-based dishes, or as a unique sauce for vegan festive meals.

  • 6 slices white bread (ensure it’s vegan)
  • 2 tbsp butter-flavoured rapeseed oil, plus extra to serve
  • 1 onion, finely chopped
  • 1 bay leaf
  • 1 thyme sprig
  • 600ml almond milk
  • pinch of ground cloves
  • pinch of ground nutmeg
  • 100ml soya cream
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Toast the bread: Toast the 6 slices of white bread until they are dark brown and crispy. Allow them to cool completely, then blitz in a food processor until they form rough crumbs.
  2. Cook the onion: Heat 1 tablespoon of the butter-flavoured rapeseed oil in a saucepan over medium heat. Add the finely chopped onion and cook for about 10 minutes until the onion is just brown and sticky.
  3. Add herbs and milk: Add the bay leaf, thyme sprig, almond milk, ground cloves, nutmeg, and season well with salt and freshly ground black pepper. Bring the mixture to a boil, then reduce the heat and simmer gently for 5 minutes to infuse the flavors.
  4. Remove herbs and add breadcrumbs: Remove the bay leaf and thyme sprig from the saucepan. Stir in all but a handful of the toasted breadcrumbs. Cook the mixture over low heat, stirring regularly, until it thickens to your desired consistency. For a smoother texture, blitz the sauce until smooth at this stage if preferred.
  5. Fry remaining breadcrumbs: While the sauce thickens, heat the remaining 1 tablespoon of rapeseed oil in a frying pan over medium heat. Fry the reserved handful of toasted breadcrumbs until they turn golden and crispy.
  6. Finish the sauce: Stir the soya cream into the sauce and heat through gently without boiling. Transfer the sauce to a serving dish.
  7. Serve: Spoon the crispy fried breadcrumbs over the top of the sauce and drizzle with a little extra butter-flavoured rapeseed oil. Serve warm. The sauce keeps covered in the fridge for up to two days.
