This Vanilla Raspberry Iced Latte is a refreshing and vibrant drink combining tart raspberry puree with smooth vanilla-flavored milk and robust espresso or strong tea. Perfect for a cooling treat or an energizing afternoon pick-me-up, it features fresh raspberries, vanilla extract, and your choice of dairy or plant-based milk served over ice, garnished with mint and extra berries.

Ingredients

Scale

Raspberry Puree

  • ½ cup fresh or frozen raspberries (60g)
  • 1 tbsp sugar or maple syrup (optional)
  • 1 tbsp water

Beverage Base

  • 1 shot espresso OR ½ cup strong brewed tea (chai or black)

Other Ingredients

  • 1 cup milk of choice (240ml – dairy or plant-based)
  • 1 tsp vanilla extract
  • Ice cubes
  • Extra raspberries (for garnish)
  • Mint leaves (for garnish)
  • Vanilla bean powder or specks (for garnish, optional)

Instructions

  1. Make the raspberry puree: In a small saucepan, combine raspberries, water, and optional sweetener. Simmer over low heat for 5 to 7 minutes, mashing the berries as they soften to release juices and flavor. Strain the mixture through a fine sieve to remove seeds, then allow the puree to cool completely.
  2. Brew your base: While the raspberry puree cools, prepare either a shot of espresso or brew ½ cup of strong chai or black tea. If necessary, chill the brewed espresso or tea to keep the drink refreshingly cold.
  3. Assemble the drink: In a tall glass, spoon in the cooled raspberry puree, then fill the glass with ice cubes. Pour in the brewed espresso or tea, followed by the milk of your choice. Add the vanilla extract and gently stir to combine all the ingredients evenly.
  4. Garnish and serve: Top the iced latte with fresh raspberries, a few mint leaves, and a sprinkle of vanilla bean powder or specks if desired. Serve immediately for a cool, flavorful beverage.

Notes

  • Use fresh raspberries for the best natural flavor, but frozen raspberries work well when fresh are unavailable.
  • Adjust the sweetness to your preference or omit sweeteners for a more natural taste.
  • Substitute espresso with strong brewed tea for a caffeine variation or if espresso is not available.
  • For a vegan version, choose plant-based milk such as almond, oat, or soy milk.
  • To intensify vanilla flavor, add a bit more vanilla extract or use vanilla bean powder.
  • Chilling the brewed espresso or tea beforehand ensures the drink stays cold longer and prevents melting too quickly from ice.
