Custard Mixture

  • 4 tbsp custard powder
  • 4 tbsp golden caster sugar
  • 24 tbsp low-fat coconut milk (from a 400ml can, for mixing)

  • 2 x 400ml cans low-fat coconut milk
  • 200ml water

Instructions

  1. Prepare the custard paste: In a mixing bowl, combine the custard powder and golden caster sugar. Add 2 to 4 tablespoons of coconut milk from one of the 400ml cans and whisk thoroughly to create a smooth, lump-free paste.
  2. Heat the coconut milk mixture: Pour the remainder of the coconut milk from one can, the entire second 400ml can of coconut milk, and 200ml water into a pan. Warm this mixture over medium heat until it almost reaches boiling point, stirring occasionally to prevent it from sticking.
  3. Combine custard paste with hot liquid: Gradually whisk some of the hot coconut milk mixture into the custard paste to temper it, forming a smooth custard sauce. Then, pour this combined custard mixture back into the pan containing the rest of the hot coconut milk mixture.
  4. Cook and thicken custard: Return the pan to low heat and continuously stir the mixture until it thickens to a smooth and creamy consistency. Avoid boiling vigorously to prevent lumps. Once thickened, remove from heat and allow to cool slightly before serving or using in recipes.
