Broth Base

- Sauté Aromatics: In a large heavy-bottom pot or Dutch oven, heat 1-2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until fragrant and golden.
- Add Ginger, Garlic, and Turmeric: Stir in the fresh grated ginger, garlic, and freshly grated turmeric. Sauté these for 2-3 minutes until the garlic becomes fragrant and slightly golden.
- Toast Spices: Add the mustard seeds (if using), cumin, coriander, and turmeric powder (if using). Continue to sauté for 1-2 more minutes to toast the spices and enhance their flavors.
- Add Liquids and Simmer: Pour in 4 cups of water and 4 cups of vegetable or chicken stock along with the salt. Bring the mixture to a simmer.
