Ingredients

Scale

Truffle Base

  • 2 cups white chocolate pieces
  • ½ cup heavy cream
  • 5 teaspoons dried culinary lavender
  • 2 tablespoons honey
  • 1 drop violet food coloring (optional)
  • 1 drop royal blue food coloring (optional)
  • 1 drop super red food coloring (optional)

Coating

  • 2 cups white chocolate (melted or tempered)
  • Powdered sugar (for coating hands)

Instructions

  1. Prepare White Chocolate: Place the white chocolate pieces in a medium bowl and set aside while preparing the infused cream.
  2. Heat Cream and Lavender: In a small saucepan, combine the heavy cream and dried culinary lavender. Heat over medium-low heat until small bubbles form around the edges, careful not to boil.
  3. Steep Lavender: Turn off the heat and allow the lavender to steep in the hot cream for 5 minutes to infuse the flavor deeply.
  4. Strain and Combine: Strain the cream to remove lavender bits and pour the infused cream over the white chocolate pieces in the bowl.
  5. Melt Chocolate Mixture: Slowly melt the chocolate and cream mixture either in the microwave in 15-second increments, stirring thoroughly after each, or over a bain-marie until smooth and fully melted.
  6. Add Honey and Color: Stir in the honey until well incorporated. Add food coloring drops if desired to enhance the truffle color, mixing thoroughly.
  7. Chill Mixture: Pour the mixture into a clean pan, cover with plastic wrap, and refrigerate until it sets firmly, about 3 hours.
  8. Portion Truffles: Using a small cookie scoop or a 1½ teaspoon measuring spoon, scoop out the truffle mixture. Coat your hands with powdered sugar to prevent sticking and roll each portion into a smooth ball.
  9. Chill Truffles: Place the rolled truffles in the freezer for 15-20 minutes to firm up before coating.
  10. Dip in White Chocolate: Dip the chilled truffles one by one into melted or tempered white chocolate to coat completely. Place each coated truffle on a parchment-lined sheet pan.
  11. Set Coating: Allow the white chocolate coating to set fully at room temperature or in the refrigerator before serving.

Notes

  • You can omit food coloring if you prefer classic white truffles.
  • Use high-quality white chocolate for the best flavor and texture.
  • Tempering the white chocolate for coating will give truffles a glossy finish and better snap.
  • Store truffles in an airtight container in the refrigerator and consume within one week for optimal freshness.
  • For a stronger lavender flavor, increase steeping time up to 10 minutes but avoid bitterness.
