Ingredients
- 2 cups heavy cream
- 2 tablespoons confectioner’s sugar
- Pinch of salt
- 1 cup lemon curd
- 1 tablespoon lemon zest
- Whip the cream: In a large bowl, combine the heavy cream, confectioner’s sugar, and a pinch of salt. Using a hand or stand mixer, whip on medium speed for 2-3 minutes until medium peaks form, meaning the cream holds its shape but is still soft and airy.
- Fold in lemon curd and zest: Gently fold the lemon curd and lemon zest into the whipped cream using a spatula until the mixture is evenly combined without deflating the airy texture.
- Portion the mousse: Divide the mixture evenly into 8 small dessert glasses, about half a heaping cup each. Optionally, garnish each serving with a dollop of whipped cream or additional lemon zest for an attractive presentation.
- Chill the mousse: Refrigerate the dessert for at least 1 hour, and up to 24 hours, to allow the mousse to set and firm up. Serve chilled for the best texture and flavor.
Notes
- Use cold heavy cream for easier whipping and better volume.
- For a vegan version, substitute coconut cream for heavy cream and use a vegan lemon curd.
- The mousse can be prepared a day in advance and kept refrigerated for convenience.
- Adjust sweetness by modifying the amount of confectioner’s sugar or lemon curd to your taste.
